Refreshing watermelon, feta and mint salad

A minimalist recipe that lets your Watermelon take center stage. Few ingredients, maximum flavor.

Ingredients

  • 4 cups of watermelon diced (seeds removed)
  • 100 g of feta cheese shredded or diced
  • 1/2 cup of leaves mint (mint) fresh, finely chopped
  • 1/4 red onion, cut into very fine julienne strips (optional)
  • 2 tablespoons of extra virgin olive oil
  • 1 tablespoon of juice five or lemon fresco
  • A pinch of salt and black pepper ground

Processing

Prepare the base

In a large bowl, add the watermelon cubes and the julienned red onion.

Add the dressings

Sprinkle the chopped mint leaves and feta cheese over the watermelon.

Dress

In a small glass, mix the olive oil, lime juice, a pinch of salt, and pepper. Drizzle this dressing over the salad just before serving.

Mix carefully.

Gently stir with two spoons so as not to break the feta cheese or crush the watermelon.
