Nutrition

Compounds that nourish

Behind its flavor there is a nutritional richness that turns each piece into a functional food. These are its most prominent compounds.

+ TOTAL SUGARS

Main energy source quantified by NMR that provides natural sweetness

+ MALIC ACID

A key organic acid that provides freshness and participates in cellular metabolism

+ STEROLS AND LIPIDS

Quantified functional components that contribute to the nutritional value of the fruit

Recipe
The final recipe
Roasted Strawberries with Port Wine

A minimalist recipe that lets your strawberry take center stage. Few ingredients, maximum flavor.

Ingredients

  • Strawberry: 450 g
  • Extra virgin olive oil: 20 ml
  • Honey: 30 ml
  • Port wine: 30 ml
  • Orange or lemon zest
  • Modena vinegar: 10 ml
  • Salt: a good pinch

Processing

Preheat

Preheat the oven to 180°C (350°F) and prepare a baking tray that can catch any juices without overflowing. We don't want to pile up the strawberries. You can line it with parchment paper or aluminum foil.

Wash, cut and dry

Wash the fruit, remove the stems, and gently dry. Cut into quarters or halves lengthwise, depending on the size. Place in a container.

Mix and stir

Separately, mix all the other ingredients well and pour over the strawberries. Stir gently and spread the strawberries in a single layer on the tray, adding any juices remaining in the bowl.

Bake

Bake for about 30-40 minutes, or until very soft and they have released their juices. It's best if they are well roasted, but be careful not to burn them.

Cool

Let them cool slightly outside the oven before transferring them to a suitable dish or container, adding all the juices from the baking tray. You can add a little more port or honey if desired.
The magic under the floor

The great secret of our crops is not in the synthetic chemicals, but in the soil.

By regenerating the health of the earth, we awaken a universe of beneficial microorganisms. This active microbiome works in perfect symbiosis with the physiology of plants, optimizing the absorption of nutrients and strengthening their defenses from the root. When a plant grows in a living, balanced ecosystem, it doesn't need to force its development. The result is pure nature magic.

Authentic Taste

The natural genetic expression of each variety is maximised, recovering the intense flavours and aromas of the past.

Superior Organoleptic Qualities

Firm textures, vibrant colors and a quality that is noticeable with the five senses.

Increased Nutrition and Shelf Life

More resilient foods, rich in antioxidants and with superior natural conservation.

Growing while respecting the cycles of life is not a trend; it is the only way to obtain exceptional fruits and vegetables, healthy for people and generous with the planet.

Discover the true taste of reclaimed earth.

Environment

Cultivate that returns more than it takes

Every regenerative crop is also a tool against climate change. By feeding soil life rather than depleting it, our farms transform carbon from the atmosphere into stable organic matter underground. This is known as carbon sequestration: the plant captures CO2, converts it into sugars and gives them to the roots and microorganisms, which fix it in the soil for years.

The result is an ecosystem that retains more water, withstands droughts better, and needs fewer external inputs. Producing exceptional food and regenerating the planet cease to be opposing objectives and become the same path.

C02

Captured and fixed in soil as stable organic matter

Live soil

More microbial biodiversity and deep roots that retain water

Closed loop

Fewer inputs for the synthesis and natural regeneration of fertility.
